1 tablespoon sugar
2 tablespoons vegetable oil

Instructions

Toast the grated coconut in a dry pan until golden brown. Set aside to cool.
Grind the toasted coconut, dried chilies, shallots, garlic, and ginger into a paste using a food processor or mortar and pestle.
Heat the vegetable oil in a large pot over medium-high heat. Add the spice paste and stir-fry until fragrant, about 3-4 minutes.
Add the beef to the pot and stir until browned on all sides, about 5 minutes.
Pour in the coconut milk and add the lemongrass, kaffir lime leaves, turmeric, coriander, cumin, salt, and sugar. Stir well and bring to a boil.
Lower the heat to a simmer and cook for 1-2 hours until the beef is tender and the sauce has thickened.
Remove the lemongrass and kaffir lime leaves before serving.
