One of the most popular dishes is “Ayum Bekakak” meaning Coconut Chicken, a hearty dish made with coconut milk and slow-cooked chicken. This plant-based dish is ideal for vegans and vegetarians and is sure to tempt your taste buds.
Ingredients:
- 1 coconut
- 2 cloves garlic
- 2 eggs
- 1 tsp. salt
- 2 cups breadfruit
- ½ red onion
- 2 stalks lemongrass
- 2 tsp. terasi (shrimp paste)
- 5 red chilies
- 4 small bird’s eye chilies
- 1 tbsp. turmeric powder
- 3 kaffir lime leaves
- 400 g. chicken meat, sliced into pieces
- 2 L. water
Instructions:
- Grate the coconut and mix it with 2 cups of hot water.
- Squeeze the mixture through a cheesecloth to get Coconut milk.
- Mix coconut milk with the sliced chicken meat in a pot, adding crushed garlic, sliced red onions, chilies, and using 3 kaffir lime leaves and 2 stalks of lemongrass to season the dish.
- Let it boil for about 20 minutes.
- Add the sliced breadfruit and stir for several more minutes.
- Crack a couple of eggs in a separate bowl and beat them, then add them to the pot and keep stirring until the egg is cooked.
- Ayum Bekakak is now ready for serving!
